The Listening-Table at Drift Out West

Just outside Austin, where the Hill Country begins to slow everything down, The Listening-Table will gather beneath the trees at Drift Out West for an evening shaped by the land, the food, and the music.
Set across 11 acres along Onion Creek, Drift Out West feels removed from the pace of everyday life. Guests will arrive through its remarkable gardens, share cocktails outdoors, and settle in for a three-course wild-game dinner created by Chef Ethan Munguia of Son of the Wild.
Known for bringing creativity and refinement to ingredients sourced from the wild, Chef Ethan will create a menu inspired by the Texas landscape. Each course will be paired with a thoughtfully crafted cocktail designed to complement the flavors of the evening.
As the sun begins to fall over the property, Phoenix-based country duo Kruse Brothers will take the stage for an intimate acoustic performance.
Brothers Chandler and Miles Kruse have built a growing national following through their distinctive harmonies, emotionally driven songwriting, and sound that moves naturally between country, rock, blues, and Southern soul. After breaking through with their viral hit “White on the Ground,” the duo spent 2025 touring alongside artists including Dylan Gossett and Larry Fleet.
Their debut album, Heartbreak and Honky-Tonk, produced by Grammy-nominated producer Trent Willmon, captures what makes the brothers so compelling: honest storytelling, powerful musicianship, and the kind of connection that can only come from a lifetime of making music together.
On October 8, that music will be stripped back and brought closer.
One table. Three courses inspired by the wild. Paired cocktails. An acoustic performance beneath the Hill Country sky. And a room full of people ready to slow down, listen, and share the evening together.
This experience will take place outdoors. Seating is intentionally limited.
